Paleo Pancakes 

Hello everyone!!

As promised, I’m keeping my blog alive eventhough my class assignment is over! As my healthy journey continuous, I wanted to find another healthy recipe that would still be delicious. When you think of yummy breakfast food you usually think of pancakes, right? Well I was definitely craving that, so I found a recipe that is grain, lactose, and sweetener free; Paleo pancakes! Super easy to make, only 4 ingredients!

Ingredients:

  • 6 eggs
  • 3 large ripe bananas
  • 1/3 cup coconut flour
  • Coconut oil for frying

Steps:

  1. Place bananas, eggs and coconut flour in a blender and purée until smooth. It should be thick, if it seems thin 1-2 teaspoons of flour should do the trick.
  2. Place a small amount of coconut oil on a pan on medium heat. Add pancake mix. Cook for 2-3 minutes or until golden brown and then flip over.

Super simple to make, right? Of course delicious too! Since I am obsessed with peanut butter, Next time I make these, I’m going to add almond butter (a healthier option). I’m sure that would make them even better. Because of the bananas it’s sweet enough to eat without syrup. (P.s. Sorry about the deformed pancakes in the picture, this was my first time making pancakes… After all, I’m still a newbie at this cooking thing 😉 )
